Lemon Pepper Bacon Wrapped Shrimp Skewers
I know what you’re thinking and you’re right, I have a bacon addiction. I can’t seem to stop myself from wrapping things in bacon and to be honest, I don’t want to stop. These little lemon pepper bacon wrapped shrimp skewers are the perfect spring recipe to kick off the grilling season! They are so simple to make, the marinade comes together in a snap, and the lemon pepper bacon is my new favorite bacon flavor! It has just the right amount of tart acidity to balance the thick-cut, greasy, delicious pork.
They are perfectly pop able bites that disappear within seconds, so be sure you make plenty if you have people coming over! I’ve said it before and I’ll say it again, everything is better when it’s wrapped in bacon!
INSTRUCTIONS: Combine shrimp, lemon juice, soy sauce, garlic, black peppercorns, salt and olive oil in a medium bowl. Marinate the shrimp in the refrigerator for 15 to 30 minutes. Cut each slice of bacon in half lengthwise, and then again horizontally to form 4 small strips from each slice of bacon. Wrap a small slice of bacon around the body of each shrimp, overlapping the edges. Push a wood skewer through the bottom of the shrimp and through the tip of the tail. Repeat with the remaining shrimp, placing 4 bacon-wrapped shrimp on each skewer.
Grill the skewers for approximately 2 minutes per side, until the bacon and shrimp are fully cooked. Serve immediately.
