Foil-Wrapped Cheesy Potatoes
Have you broken out your grill yet? If not, I’ve got the perfect recipe for you to kick off grilling season with! Foil-wrapped cheesy potatoes! Whether you are grilling or heading out on a camping trip, these cheese potatoes are AWESOME. Wrapped up tightly in foil they can cook over any type of grill or straight over the campfire. They are bursting with all the flavors you love from cheesy potatoes, with just the right hint of spice to balance out that ooey gooey mess.
You can easily chop the potatoes up into chunks instead of thin slices for a more rustic interpretation. I happen to love how fancy these look, layered on top of each other, inside the foil. Simple, straightforward, flavorful and full of cheeeeeese. How can you go wrong?
INSTRUCTIONS: Cut a large piece of heavy duty aluminum foil - approximately 20 inches by 25 inches. In the center, spread an even layer of sliced onions, making sure to leave enough room on all sides to fold the foil up and seal. Layer the potatoes in three rows over the onions, overlapping them like scalloped potatoes.
Sprinkle over garlic powder, onion powder, and cayenne and season with salt and pepper. Cut up the butter into small pieces and distribute evenly over the potatoes. Cover the potatoes with cheese. Pour over heavy cream and tightly seal the foil on all sides over the potatoes. Fold up the foil to create a bowl.
Grill for approximately 35 to 40 minutes, or until the potatoes are fork tender. Serve immediately.
