Layered Chicken Mason Jar Salads
Have you started with the picnic festivities yet? Because I sure have! It’s so wonderful to be outside with friends and family, enjoying the sun and some really good food. I will take any excuse I can get to go on a picnic, even if it’s a quick one on my lunch hour. Just get me outside!
These layered chicken salad mason jars are my new favorite picnic food. They are fresh and full of flavor, plus so easily portable! You can just eat them straight out of the jar, making extra room in your picnic basket for that chilled white wine.
The bonus is there is no cooking time involved, so you will get from your kitchen to that picnic blanket even faster!
INSTRUCTIONS: In a small bowl, whisk together the ingredients for the dressing. Set aside.
Remove the tops of four mason jars and begin layering the salad. Start with a layer of lettuce, followed by a layer of chicken, then chopped green pepper and tomato halves. Top with a layer of avocado and add a heaping spoonful of dressing.
Be sure to leave about an inch empty at the top. When ready to eat, ensure the tops are firmly on the mason jars and shake to coat the salad with the dressing. Enjoy!
