Spicy Homemade Potato Chips
Summer is here and that means it is picnic season! No picnic would be complete without a crunchy handful of potato chips. For your next picnic, ditch those boring ol’ bagged potato chips and fry up some of your own spicy homemade potato chips!
Making fresh potato chips is easier than you would think and with this extra spicy, smoky seasoning, you won’t be able to go back to any other potato chip again. They are bursting with flavor and are the perfect accompaniment to any picnic meal, from sandwiches to hamburgers and hot dogs to salads.
INSTRUCTIONS: Add the water and 3 Tbsp of salt to a large bowl. Submerge the sliced potatoes in the water and allow to rest in the refrigerator for approximately 1 hour.
In a small bowl, stir together 1 Tbsp salt, cayenne pepper, chili powder, paprika, garlic powder and black pepper. Set aside. Fill a heavy bottomed pan with oil until approximately 3” to 4” deep. Heat over medium-high heat until the oil reaches 375 degrees.
Drain the potatoes and pat dry to remove any excess water. Fry the potato slices in batches, until golden brown and crisp, approximately 1 minute, flipping them over halfway through. Remove to a a paper towel lined baking sheet to drain. Sprinkle immediately with the spice mixture. Repeat with remaining potato slices until finished.
Store in an airtight container for up to 1 week.
