Cracked Four Pepper Bacon Wrapped Meatloaf

The flavor from the cracked four pepper bacon (one of my favorite flavors from Pig of the Month – talk about heaven!) seeps into the meatloaf as it bakes, preserving the moisture inside so it doesn’t turn into a brick. The silky meatloaf and crispy bacon, is topped with ample amounts of sauce throughout the cooking process so it caramelizes just the right amount. This process making every bite perfect.

INSTRUCTIONS: Preheat oven to 350 degrees. Line a rimmed baking sheet with aluminum foil and place a baking rack on top of the foil. In a small bowl, stir together ketchup, brown sugar, Worcestershire sauce, and a couple turns of freshly cracked pepper. Set aside. In a large bowl, combine breadcrumbs with cayenne and dried oregano. Stir to combine. Add to the bowl onion, garlic, ground beef, salt and beaten eggs. Knead together the mixture until every ingredient is evenly incorporated. Form the meat mixture into a loaf shape and place on the baking rack resting on the lined baking sheet. Spread one-third of the ketchup sauce on top of the meatloaf.

Place 6 to 7 slices of bacon over the meatloaf, working from one end to the other. Tuck the ends of the bacon underneath the meatloaf. You may need to slightly overlap the slices of bacon over each other as you go along. Bake for 45 minutes. Remove from the oven, pour over another third of the ketchup sauce, and return to the oven for 20 minutes. Allow it to rest for at least 10-15 minutes before slicing. Serve with the remaining sauce.
