Jamaican Jerk Double Decker BLAT
Who doesn’t love a fun new twist on a classic sandwich? This the king of all sandwiches because of it’s double-decker thickness and classic flavors, with the additional Jamaican Jerk seasoned bacon – holy YUM! Throw in a little mango pineapple salsa on the side and I am ready for a dip in Caribbean waters after I polish this bad boy off.
INSTRUCTIONS: Preheat oven to 425 degrees. In a medium bowl, combine all ingredients for the salsa. Refrigerate until ready to serve.
Line a rimmed baking sheet with aluminum foil and add a baking rack on top that fits within the edges of the pan. Place bacon slices on the rack and bake for 10 to 15 minutes, until crispy. Cut each slice in half. Time to assemble! Place one slice of toasted bread on a clean work surface. Spread a layer of mayonnaise on top. Add one slice of tomato, then one half of a lettuce leaf. Top with a few thin slices of avocado and two halved slices of bacon. Top this with one slice of toasted bread. Repeat the layers of tomato, lettuce, avocado, and bacon. Spread a layer of mayonnaise on the top piece of bread and place mayonnaise-side down. Repeat this entire assembly with the second sandwich. Secure each with a toothpick and serve!
