Raspberry Champagne Glitter Jell-O Shots
It's almost time to ring in a brand New Year! I don't know about you, but when the clock strikes midnight, I want to have something fun and festive in hand to toast a brand new start to a year. That's where these sparkling Raspberry Champagne Glitter Jell-O Shots come in!
Instead of regular ol' champagne Jell-O shots, these adorable homemade glitter shot glasses make the whole party so much more festive - not to mention switching things up with some raspberry-flavored Jell-O... You can make these guys well in advance of your party, from 3 hours before to the night before (ahem, like tonight!), so all you have to worry about is enjoying the party and ending 2016 in the best way possible - boozy and sparkly!

Raspberry Champagne Glitter Jell-O Shots from Pig of the Month BBQ on Vimeo.
INSTRUCTIONS: Clear a clean work space and put down either newspaper or parchment paper. Spray the bottoms of the clear plastic shot glasses with a light coat of adhesive. Gently shake glitter over the glasses and tap to shake off excess glitter. Place upside down on clean newspaper or parchment paper to dry, approximately 5 minutes. In a large bowl, combine boiling water with Jell-O. Whisk for 3 minutes, until the powder is dissolved. Stir in champagne and water until well-combined. Carefully pour mixture into glitter shot glasses. Chill 3 to 4 hours before serving.

Southwestern Pulled Pork Crostini
It's all about the festivities this week because the celebration season is far from over, piggy peeps! Did you all have a great Christmas? It's hard to believe that the New Year is just around the corner...
All I know is I'm kinda over 2016 and I'm ready to kick off a new and better year in 2017 already! This year I'm super excited to be ringing it in with some of these KILLER Southwestern Pulled Pork Crostini and a couple glasses of champagne deliciousness.
These little pulled pork crostini are full of different flavors and textures to keep the party rocking in your mouth! The bite of the red onion, the saucy and juicy Pig of the Month BBQ Pulled Pork, the sweet pop of corn and the salty burst of queso fresco - they all work together to make the ideal bite. These appetizers are small enough to not make everyone all bloated come the ball drop, but they are filling enough to fight off the dangerous empty stomach syndrome that can lead to a serious hangover on New Year's Day. Plus they are easy AF to pull together!
Just pop the champagne and prosecco, and let's ring in the New Year RIGHT.
INSTRUCTIONS: Set broiler to high. Place bread slices in an even layer on a baking sheet. Toast under broiler until golden brown. Top each toasted slice of bread with a layer of pulled pork. Add a couple slices of red onion, then top with corn and avocado. Sprinkle the crostini with a generous helping of queso fresco and chopped cilantro. Serve with champagne or prosecco!

Overnight Bacon & Chocolate Chip French Toast
In the dead of winter, all I want to wake up to is something sweet, savory and super easy to make. That's why this Overnight Bacon & Chocolate Chip French Toast fits the bill almost every weekend. It's got sweet french toast, rich dark chocolate and savory bacon which when combined together in a baked up casserole of goodness, will completely blow you away with every single bite.
What I really love about this recipe is that you can easily make it the day or night before. That way when you are groggy in the morning, reaching for your cup of coffee, all you have to worry about is setting the oven and placing the baking dish in there. By the time you feel awake, you'll be sitting down to a heaping, gooey portion of this deliciousness...
It's perfect for the holidays, especially when you have family staying with you and the chaos of Christmas morning! However this recipe can keep you going and going throughout the cold months that are still ahead of us, so don't go only making it once ;) Happy holidays everyone! Enjoy the long weekend!

Overnight Bacon & Chocolate Chip French Toast from Pig of the Month BBQ on Vimeo.
INSTRUCTIONS: Spray a 9x13-inch baking dish with non-stick cooking spray. Add half of the cubed bread to the pan and top it with half of the chopped bacon and chocolate chips. In a medium bowl, whisk together eggs, milk, sugar, vanilla, salt, cinnamon and cloves. Pour mixture over bread evenly to coat everything. Cover and refrigerate overnight. When ready to bake, preheat oven to 400 degrees. Bake uncovered for 15 to 20 minutes, until golden brown and the center is set. Top with powdered sugar and serve immediately.

Best Ever BBQ Chicken Enchiladas
You know when you discover one of the best combinations ever? Because I just did. It's called the happy little crossing place between Mexican and BBQ....
I can't lie; it's freaking magical!
The cheesy, ooey gooey normal enchiladas recipe is made oh-so much better with the addition of BBQ sauce and the best ever Pig of the Month BBQ pulled chicken. It's a little spicy, a little sweet and totally tangy, making every bite the most dreamy thing to hit your taste buds since a slice o' crispy bacon. If your tummy isn't rumbling at the sound of that, there's honestly something wrong with you...
Get down to Chow Town!
Serves 4 to 6 INSTRUCTIONS Preheat oven to 350 degrees. Grease a 9x13-inch baking dish. Add vegetable oil to a medium skillet and heat over medium-high heat. Add onion and cook until tender, approximately 3 minutes. Add chicken and chiles. Season with salt and pepper and cook until warm. Keep warm over low heat. Whisk together enchilada sauce and BBQ sauce in a small bowl. Set aside. Assemble the enchiladas by laying out the tortillas one at a time on a clean work surface. Spoon on 2 Tbsp of the enchilada BBQ sauce, spreading it out to coat the entire tortilla. Add 2 Tbsp of the chicken mixture down the center of the tortilla, then sprinkle with cheese. Roll up tightly and place in baking dish. Repeat with remaining tortillas. Spread remaining sauce over the top of the enchiladas. Top with remaining cheese. Bake for 20 minutes. Garnish with chopped cilantro and serve immediately.

Crockpot Cranberry Mulled Cider
Sometimes you just want something the whole family can enjoy and warm up with during these cold months. With Christmas right around the corner, we like to whip out an easy drink recipe that even the little kiddos can indulge in. This Crockpot Cranberry Mulled Cider is the perfect festive drink for all of your family and friends to enjoy!
It's warm, full of delicious spices and takes literally no effort to make. While you are enjoying Christmas morning festivities, this cider can be brewing in the slow cooker so by the time all the presents are opened, you can pour a giant glass for everyone. If you have an annual family snowball fight or sledding planned anytime this winter, this is the drink to warm you up from the inside out.
Simply add some vodka for in the adult glasses so that the season can be even more merry and bright!
Serves 10 to 12 INSTRUCTIONS: Combine all ingredients in a crockpot. Heat for 2 to 3 hours on low. Serve.

Lightened Up Chicken Mac and Cheese
My ultimate comfort meal? A heaping bowl full of macaroni and cheese. No, not the stuff from the box people. I mean the real, down-home heart stuff that fills you up and warms you from the inside out.
Of course, eating bowl after bowl of that cheesy deliciousness is a little bad for the waistline... On the other hand, I don't believe in compromising flavor in favor of just eating the healthy stuff. That's why this Lightened Up Chicken Mac N Cheese is the one dinner you have to add to your winter weeknight rotation! It's creamy and dreamy and oh-so cheesy, but the lightened up cheese sauce and whole wheat noodles keep you from adding too much to your hips.
Without sacrificing any flavor! The Pig of the Month BBQ Pulled Chicken sure takes care of THAT. BOOM baby. Let's get cooking!

INSTRUCTIONS: Preheat oven to 375 degrees. Spray a baking dish with cooking spray. In a large saucepan, melt butter over medium-high heat. Add onion and cook until tender, approximately 3 minutes. Add flour, stirring to combine, and cook until golden, approximately 30 seconds to 1 minute. Whisk in milk and broth. Bring the mixture to a boil and cook for 5 minutes, until thickened. Remove from heat and stir in cheese until melted. Season with salt and pepper to taste. Stir in macaroni and chicken into the saucepan. Pour into the prepared baking dish. Top with an extra sprinkled of cheese and the bread crumbs. Bake for 15 to 20 minutes, until bubbly and the top is golden.

The Detox Cocktail
It's getting pretty darn chilly outside and personally, I love brightening up my cocktail hour with something light and acidic in the dead of winter. It's like adding a little ray of sunshine to every dreary cold day! Instead of a heavy lemon drop martini or other rich and sweet cocktail, The Detox Cocktail is perfect to brighten up a snowy day AND won't be too bad for that waistline.
That's right, this is a HEALTHY cocktail. I'll pause while you pick your jaws up off the floor... This cocktail has healthy, clean ingredients so you don't have to feel guilty after indulging in a few! Plus there's some apple cider vinegar in there (TRUST ME, it's delicious ok?) which we all know holds magical properties to help your digestion. So if you're feeling a little out of whack or off balance with trying (and failing) to keep with a diet... Just sit back and sip on The Detox Cocktail and feel pretty darn good about your new healthy habit.

INSTRUCTIONS: In a small saucepan, bring vinegar, honey and lemon juice to a boil with thyme sprig. Remove from heat and steep for 5 minutes. Remove thyme sprig. Add honey mixture to a shaker filled with ice. Add vodka and shake well. Strain into rocks glass filled with ice. Top with tonic water. Garnish with lemon wheel and sprig of thyme.
