Crockpot Memphis Style BBQ Ribs
You know when you want those tasty, saucy, oh-so tender ribs but you don't have the time to slave away over the grill? I'm talking about those weeknights when you want to roll up to a giant slab of ribs without spending an arm and a leg, and without having to tend to a grill all dang day.
Wish no more, because I've got your weeknight meal run rescue right here. All you have to do is get your slow cooker ready for a day's worth of cooking those meaty bones low and slow. When you get home to these bad boys, your home will smell like BBQ and you'll be drooling in anticipation of that fall off the bone tender meat!
It's the rub PLUS the Pig of the Month BBQ Love Me Tender BBQ Sauce that make these ribs so ridiculously flavorful and delicious. You don't have to worry about adding extra liquid because these ribs will put their own juices to work. You don't end up with a gross watery mess at the end of this cooking round. Nope, you get those perfectly cooked, tender, melt-in-your-mouth ribs you've been dreaming of. So who's hungry?!

INSTRUCTIONS: In a small bowl, whisk together spices to create the super secret rub. Remove the membrane from the ribs and cut slab into three equal pieces. Add one of the three piece to the insert of a slow cooker. Top with one third of the rub, using your hands to rub it into the meat. Top the slab piece with one third of the BBQ sauce. Repeats these layers (ribs, rub, sauce) until the last layer of sauce. Cook on low for 8 to 10 hours. Remove from slow cooker and serve.

Maple Bacon Marshmallow Bark
Can you believe it's almost December?! My mind is still reeling from Thanksgiving and holiday parties are already filling up each and every weekend from now until Christmas. I'm trying to think ahead and all I can think to give people is something food-related for Christmas presents...
Big surprise considering my entire life revolves around food. Well, more specifically bacon... This maple bacon marshmallow bark is a fun sweet and savory treat that no one will be able to get anywhere else! Forget candy canes or caramels, this chocolate bark can only be found in one place... your kitchen!
A treat like this one is SUPER easy to make and barely takes any time. You just need a microwave and a freezer to get this little pile of treats whipped up. Then box it up and give it out as Christmas presents, hostess gifts for all those parties you'll be attending, or just load up on massive amounts of this bark for yourself. The sweet and savory combination makes this bark the ultimate snack to indulge in on any chilly afternoon this December!
INSTRUCTIONS: Add the dark chocolate chips to a microwavable bowl. Microwave the chocolate for 45 seconds to 1 minute. Remove the bowl and stir. Place back in the microwave for 15-second intervals, stirring in between each, until the chocolate is melted and smooth. Stir in walnuts. Line a baking sheet with wax paper. Spread the melted semi-sweet chocolate in an even layer on the wax paper. It should be approximately 1/4″ thick. Sprinkle with bacon and mini marshmallows. Allow it set for 30 minutes in the freezer. Bacon, Herb, and Cheese Christmas Bread Tree
Nothing says Christmas like a Christmas tree, am I right? Even better than a Christmas tree? One made out of bread. Stuffed with cheese. Topped with fresh herbs and delicious, crispy bacon...
This treat of a tree is one of my favorite recipes to bust out around the holidays. It's bright and full of flavor, and being stuffed with gooey cheese in the perfect surprise for everyone attending your holiday meal.
The whole thing comes together in only 20 minutes, so there's no kneading. No waiting for bread to rise. And no sharing if you don't have the heart to... I'm just saying, I wouldn't blame ya if you don't share.
INSTRUCTIONS: Preheat oven to 400 degrees. Slightly roll out pizza dough and cut into 22 squares. Place one cube of cheese in the center of a square of dough. Wrap the dough up and around the cheese, pinching the edges together.
Place seam side down on a parchment paper lined baking sheet. Continue with the remaining cheese and dough, creating a Christmas tree shaped as shown in photos above.
Brush the tops of the dough balls with butter. Bake 15 minutes. Remove from oven and brush again with butter. Sprinkle with fresh herbs and bacon. Serve immediately.

BBQ Chicken Avocado Flatbreads
Welcome to 2017 piggy peeps! I don't know about you but I am not ready to get back into the swing of things to kick off the New Year. It feels like there are 5 million to-do's on my list and I am barely making a dent in them a few days into the new year... One thing that's falling off my radar? Dinner. I am struggling with pumping out tasty meals without spending wayyyyy too much time on them. Since I have too much to do at work, I am starting to rely on meals of popcorn and soda - NOT how I wanted to start the year.
Instead, I'm pulling out my Pig of the Month BBQ Shredded Chicken and I'm making something more than just a sandwich with it. These flatbreads are one of the easiest meals EVER and there's no one that can resist them, I don't care how picky of an eater they are. The fluffy naan with BBQ sauce, chicken and avocado is the best base for any pizza. Throw in the bite of some red onion and salty cheese and holy wow, this pizza is one the entire family will be begging you to make on a regular basis. Not to mention it's pretty dang healthy in terms of pizza, so you can feel ok about sticking to those New Year resolutions ;)
INSTRUCTIONS: Place naan on a lined baking sheet.
Spread each with half of the BBQ sauce.
Top with chicken, red onion and cheese.
Place under broiler set to high for approximately 2 to 3 minutes, or until the cheese melts.
Remove from oven, top with avocado, cilantro and a sprinkle of queso fresco. Serve.

Lightened Up Chicken Mac and Cheese
My ultimate comfort meal? A heaping bowl full of macaroni and cheese. No, not the stuff from the box people. I mean the real, down-home heart stuff that fills you up and warms you from the inside out.
Of course, eating bowl after bowl of that cheesy deliciousness is a little bad for the waistline... On the other hand, I don't believe in compromising flavor in favor of just eating the healthy stuff. That's why this Lightened Up Chicken Mac N Cheese is the one dinner you have to add to your winter weeknight rotation! It's creamy and dreamy and oh-so cheesy, but the lightened up cheese sauce and whole wheat noodles keep you from adding too much to your hips.
Without sacrificing any flavor! The Pig of the Month BBQ Pulled Chicken sure takes care of THAT. BOOM baby. Let's get cooking!

INSTRUCTIONS: Preheat oven to 375 degrees. Spray a baking dish with cooking spray. In a large saucepan, melt butter over medium-high heat. Add onion and cook until tender, approximately 3 minutes. Add flour, stirring to combine, and cook until golden, approximately 30 seconds to 1 minute. Whisk in milk and broth. Bring the mixture to a boil and cook for 5 minutes, until thickened. Remove from heat and stir in cheese until melted. Season with salt and pepper to taste. Stir in macaroni and chicken into the saucepan. Pour into the prepared baking dish. Top with an extra sprinkled of cheese and the bread crumbs. Bake for 15 to 20 minutes, until bubbly and the top is golden.

Pulled Pork Veggie Avocado Toasts
Avocado toast might be all the rage for all those health nuts out there wanting to eat something good for breakfast or lunch, and while we appreciate the healthy attempt, I kind of like to trash my healthy plans up... With a whole heaping helping of meat in these killer Pulled Pork Veggie Avocado Toasts!
I can honestly admit that my attempts at getting healthy this year are pretty dang lame... I am not the biggest fan of sticking to a strict diet. For obvious reasons I'm sure. I mean when I have Pig of the Month BBQ Pulled Pork in my fridge, why the heck would I ever want to just eat my fruits and veggies?! Nope, instead I want to load up on my pork and I GUESS I can load up on some veggies at the same time.
With the pulled pork, these veggie avocado toasts burst with tons of flavor. It's like eating a pulled pork taco but on toast! I love making this for breakfast or lunch, or a mid-afternoon snack, because it's super easy AND it's easy to throw together in even the smallest of kitchens (like that dinky one at your office...). So load up and get healthy (well healthy-ISH)!
INSTRUCTIONS: Spread toast with a layer of mashed avocado. Top with pulled pork, chopped bell peppers, queso fresco and chopped cilantro. Serve!

Cheesy Jalapeno Bacon Dip
Y'all know I couldn't leave you hanging right before the big game on Sunday without something delicious to make, right? For the love of all things bacon and cheese, this Cheesy Jalapeno Bacon Dip is the one recipe that HAS to hit your game day spread this weekend. I LOVE serving up cheesy dips for football parties because they are always the star of the entire day. The gooey cheese served up on crusty bread or tortilla chips is all too addicting (plus it helps balance out all those boozy drinks you'll be guzzling as you cheer your team on).
Heck, even if you are just watching for the commercials, you still need something to eat that'll warm you from the inside out! This creamy, cheesy dip is spicy and savory, with the perfect salty hit of bacon from Pig of the Month BBQ's Applewood Smoked Maple Bacon. The thick cuts of bacon really stick out in this dip, so it's ideal for all those bacon-lovers in yo life. When I dip, you dip, we dip! Time to DIG IN.

Serves 6-8 INSTRUCTIONS: Preheat oven to 400 degrees. In a large bowl, mash together cream cheese, mozzarella cheese, jalapeños, mayonnaise, garlic, salt, pepper, cayenne, butter, and bacon until combined. Add mixture to a medium-sized baking dish. Pig Overload Fries
Who's ready to get down on some serious pig?? That's exactly what these Pig Overload Fries are here for! When it comes to watching that pigskin fly and rooting for my favorite team, football food is everything I need to make me happy in life. Well, along with a couple of beers of course.
It's only natural to load up all the pork and bacon on these delicious fries, because y'all know I like my fries with a side of meat, plus some extra meat. Then I load it up with some cheddar cheese deliciousness and top it all off with some BBQ sauce. Talk about a hot mess of deliciousness, am I right? Thus the best fries you will ever eat in your LIFE were born.
Seriously, these are the best fries ever. Just look at that gorgeous mess and then tell me that you can resist it... Yea, didn't think so. So go ahead, get messy. Eat it all. Feel no guilt and chug a cold brew. This IS football season, people. Get into it already!
INSTRUCTIONS: Cook French fries according the instructions on the package. In a medium saucepan over medium heat, melt the butter with paprika and cayenne powder. When melted and just starting to bubble, stir in 1/8 cup flour. Let brown, approximately 30 seconds to 1 minute, and whisk in 1 1/2 cups milk.
Continue to stir the milk mixture until it thickens, approximately 1 to 2 minutes. Remove from heat and stir in cheddar cheese until melted.
Place cooked fries in a large serving dish. Top with pulled pork and bacon. Drizzle over cheese sauce and BBQ sauce. Garnish with chopped parsley and serve immediately.

Grilled Pineapple Bourbon Smash
You all know we LOVE to get our grill on in the summer. There's only a few precious month's of grilling and boozing to make the most of before the cold weather sets in. As much as we still love those fall months (can you say 'tailgating heaven'?), we kind of wish we could grill all year round.
So when those warm temps hit, it's all about grilling all the things. We grill our meats, our veggies, our desserts and now, even our cocktails. Grilled pineapple is already one of our fav summer treats, so why not throw it in with some bourbon so you have something delicious to sip on while you're working hard over that hot grill? There's no reason not to, obviously.
These bourbon smash cocktails are packed with grilled pineapple so they are almost like a sangria with all that chunky fruit in there. Of course, instead of wine there's a ton o' bourbon - right up our alley for cocktail hour. Keeping those summer vibes going and working our grills as hard as possible is all we BBQ-loving peeps know how to do, after all. Cheers to the summer!
INSTRUCTIONS: In the bottom of a double old fashioned glass, muddle grilled pineapple with lime juice.
Pour in bourbon and stir. Fill glass with crushed ice and top with soda water. Stir once more to combine. Serve.
