Hearty Guinness BBQ Brisket Stew
There’s nothing like a Guinness stew on a cold day. Unfortunately a traditional Guinness stew can take a bit of time, which I rarely have on weeknights, especially after battling traffic in snow during rush hour. With this recipe in less than 30 minutes, you’ll have a delicious stew that will warm you up inside and out!
This hearty Guinness stew features one of my favorite beers and one of my favorite meats – Pig of the Month BBQ Beef Brisket.
INSTRUCTIONS In a large pot, heat olive oil over medium heat. Add garlic, carrots, and celery and cook for approximately 5 minutes. Add flour and stir to coat. Slow pour in beef broth and Guinness. Add onion powder, salt, and pepper and bring mixture to a boil. Reduce to a simmer over medium heat and cook for 15 minutes until potatoes are tender. Add the brisket and cook until heated through, approximately 3 minutes. Serve warm.
I can’t wait to wake up on New Year’s Day to a huge bowl of this, some bread, and a list of New Year resolutions ready to be tackled. Happy New Year Pig of the Month fans!
