Bacon Kale Salad with Lemon Vinaigrette
It’s hard to believe that the first month of the New Year is already over! Have you been able to stick to your New Year’s resolution to eat a little healthier in 2015? If you haven’t, this bacon and kale salad will make you want to hop back on the healthy train and get some greens in your belly. Of course, the fact that it has bacon is the first thing that is catching your attention – who can resist Pig of the Month Applewood Smoked Maple Bacon? No one. Ever.
The bacon is a great addition to the salad, but the rest of the ingredients play a big role in creating a party of different textures and flavors in every bite. A healthy base of kale, crunchy savory bacon and almonds, sweet tart dried cranberries, chewy manchego cheese, and finally vinaigrette with the perfect balance of acidity to cut through it all. You’ll be delighted with every bite!
INSTRUCTIONS: In a small bowl, combine red wine vinegar, lemon juice, honey, salt, and pepper and whisk together. Slowly whisk in olive oil until combined.
In a large bowl, add the kale, manchego cheese, almonds, bacon, and dried cranberries.
Drizzle the dressing over the salad and toss to coat evenly. Serve immediately.
