These are such a labor of love, we only do a limited run of them, and we only do them once year. 

We take grass-fed filet mignon medallions, and combine them with the classic mushroom duxelle mixture, wrap it in a slice of prosciutto, and then cover it in puff pastry. 

We par cook them to perfection, so all you need to do is pop them in the oven and they come out perfectly cooked medium 20 minutes later.
