You see those cute little cups all over the internet but the secret to their awesomeness is never really revealed... That's exactly why I'm here, bacon-loving peeps! I am coming at you with my all-time favorite food, BACON, surrounding perfect cups of eggs and topped with some spices and cheese to wash it all down with properly.
These are the perfect little breakfast cups to take with you on the go as you head out to work or to drop in the kiddos hands as they run to catch the bus. They are perfectly portable and you can make as many as you want ahead of time! Whip them up in no time on Sunday and then boom. Just like that, you've got breakfast for the whole week for the whole family.

INSTRUCTIONS: Preheat oven to 350 degrees. Grease a muffin tin with cooking spray. In a small bowl, stir together paprika, cayenne pepper and garlic powder. Set aside. Line each cup with one slice of bacon that has been folded in half, pressing the bacon to the sides of the cup. The bacon should only line the sides of the cup, it should not cover the bottom of each cup. Crack an egg in the center of each cup. Sprinkle each cup with the paprika spice mixture. Top with a sprinkle of shredded cheddar cheese. Bake for 20 minutes, or until the eggs are set. Remove from oven and allow to cool for 5 minutes before removing the cups from the muffin tin.
