INSTRUCTIONS: Slice the sourdough bread into 4 long strips that are as wide as your finger. Sandwich the slices of gruyere between the slices of bread, evenly distributing between the two sandwiches. Butter the outside slice of bread of each sandwich. Heat a small skillet over medium-high heat and add the sandwiches, butter side down. Cook until one side is golden brown, then flip. Cook until the other side is golden brown and the cheese is melted. Set aside.
In a small saucepan, heat olive oil over medium heat. Add garlic and brown for approximately 1 minute. Add the tomato soup, water, red pepper flakes and dried oregano. Stir to combine and heat until warmed through, approximately 2-3 minutes. Finish with heavy cream and bacon bits, and season with salt and pepper. Serve tomato soup in tall shot glasses with the grilled cheese finger sandwiches.
INSTRUCTIONS: Preheat oven to 375 degrees. On a lightly floured surface, roll out puff pastry into a 3"x4.5" rectangle. Cut into two long strips. Starting on one end of a long strip, roll one sausage tightly with the pastry strip, pressing the seams together. In a small bowl, beat the egg yolk with the water. Brush the top of the sausage in a blanket with the egg wash. Cut the rolled sausage into 5-6 pieces.
Line a baking sheet with parchment paper or a Silpat and place the sliced sausage pieces on the sheet. Bake until the pastry is golden brown and puffed, approximately 10-15 minutes.
In a small bowl, combine ketchup, bourbon, pineapple juice and cayenne. Serve alongside the sausages in a blanket bites.
INSTRUCTIONS: Preheat oven to 350 degrees. Spray a mini muffin tin with cooking spray. In a large bowl, combine cooked macaroni and cheese, beaten egg, chopped jalapeño, and 3/4 of the chopped bacon. Stir everything together until it is combined.
Divide the mixture evenly between the mini muffin cups. In a small bowl combine the crushed crackers and remaining chopped bacon. Sprinkle the mixture over the mac and cheese cups. Bake for approximately 15 minutes, until the tops are toasty and golden. Cool for approximately 5 minutes before removing from the pan.
