Frozen Chocolate Covered Banana Pops
School’s out for the summer! Are you dying to figure out a fun, healthy snack that will entertain the kiddos and keep you sane over the next three months? These frozen chocolate covered banana pops are the perfect afternoon activity that turns into a healthy and satisfying summer snack to beat the summer heat.
You can get super creative with the things you dip these frozen banana pops in. Either dark chocolate or milk chocolate will work perfectly. You can dip them in sprinkles, chopped nuts, mini chocolate chips, candy (think mini M&Ms and Nerds) or even mini marshmallows. Let the kids go crazy and make their own custom banana pops!
INSTRUCTIONS: Peel and cut the bananas into pieces, approximately 6 pieces per banana. Place cut side down on a parchment-lined baking sheet. Insert lollipop sticks into the pieces and freeze for approximately 20 minutes.
Add the chocolate chips to a microwave safe bowl and microwave for 30 second intervals, stirring in between each, until the chocolate is melted and smooth. Add chopped walnuts, sprinkles and any other desired toppings into separate bowls.
Remove the banana pops from the freezer. Dip each pop into the chocolate, allowing the excess to drip off, and then into your desired topping. Place back on the parchment lined baking sheet. Once all pops have been coated, return the sheet to the freezer.
Freeze for at least 4 hours before serving, ideally overnight.
